pineapple cakes

I love baking with pineapple.  I truly believe that baking pineapple is the best way to eat it.  I was inspired this weekend to make mini pineapple upside down cakes for a friend's birthday party.  By themselves the cakes were not much to look at, but I made pineapple flowers to go on top.  They turned out beautifully (and delicious!).
Cut into thin slices and bake at 250F for an hour or two, until dry

They will naturally curl on their own, but putting them in a muffin tin helps mold their shape

Voila!  Mini pineapple upside down cake.  I am so gourmet.
