I have two things for you today: one really great banana muffin recipe and a baking tip.   I make these muffins often - they are the "Best Ever Banana Muffins".  

And I don't know about you, but I don't like to sit around to wait for my bananas to go brown.  Bananas ripen really fast here, but they also spoil really quickly and if you wait too long and don't look carefully, you might find worms inside.  Ew.  I now have a no-wait, worm-free alternative: Bake your bananas beforehand.  Put whole bananas, peel and all, on a baking sheet and bake at 300 degrees until they turn brown. 

There you go!  Banana issues solved.
